Ataïr is a story of know-how

From pruning the vines in winter to disgorging the bottles 4 years later, Ataïr is the culmination of a long process requiring humility and patience. From the hands of the wine grower to the taste buds of the cellar master, every single batch receives the same constant attention.

At harvest time, the mature bunches of grapes are all gathered by hand. Only those grapes that are absolutely perfect are selected, and immediately delivered to the wine press. After approximately a fortnight of fermentation, the clear wines obtained are entrusted to the cellar master\'s know-how. Thanks to his innate intuition and many years of experience, he will skilfully undertake the blending that gives each Ataïr Champagne blend, Rose, Blanche and Or, its own inimitable identity.

The wine is then bottled, and begins its second phase of fermentation. It is only at this stage, as it becomes effervescent, that the wine turns into genuine champagne. It then matures for 3 years in the cellars, gradually reaching the point where it is able to fully express all the complexity of its aromas and personality.
